Method
Season and mix the gravy
- Season the bone-in chicken thighs with salt, pepper, and onion powder.
- Whisk the cream of mushroom soup, chicken broth, ranch seasoning mix, minced garlic, and dried thyme together until smooth.
Slow cook until tender
- Place the chicken in the slow cooker and pour the gravy mixture over the top.
- Cook on Low for 5–6 hours, or High for 2.5–3 hours, until the chicken is fall-apart tender.
Finish the gravy and serve
- Remove the chicken from the slow cooker and stir the sour cream into the gravy until smooth.
- Return the chicken to the creamy gravy, then serve over mashed potatoes with fresh parsley on top.
Notes
Pro tip: For the creamiest gravy, stir in sour cream after the slow-cooking time, not during. Store leftovers covered in the refrigerator up to 3 days; rewarm gently to avoid breaking the sauce. Freezing is not recommended because the sour cream gravy can separate after thawing. Dietary swap: use a low-sodium ranch seasoning mix and low-sodium chicken broth to reduce sodium.
