Ingredients
  

Chicken and fillings
  • 2 lb boneless skinless chicken breasts
  • 1 can (15 oz) black beans drained and rinsed
  • 1 can (15 oz) corn drained
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 1 packet (1 oz) taco seasoning
  • 1 packet (1 oz) ranch seasoning mix
  • 8 oz cream cheese cubed
  • 0.25 shredded cheddar cheese for serving
  • 0.25 sour cream for serving
  • 0.25 fresh cilantro for serving

Method
 

Layer and cook
  1. Place the boneless skinless chicken breasts in the slow cooker. Arrange them in an even layer so they cook through uniformly.
  2. Add black beans, corn, Rotel diced tomatoes with green chilies, taco seasoning, and ranch seasoning mix on top of the chicken. Spread the mixture so it covers the chicken as much as possible.
  3. Place cream cheese cubes over everything. Keep the cubes visible on the surface to help them melt evenly.
  4. Cook on low for 6–7 hours (or high for 3–4 hours) until the chicken is cooked through. Watch for steaming and tender chicken that pulls apart easily.
Shred, melt, and combine
  1. Remove the chicken from the slow cooker and shred it with two forks. Shred while it is hot for the best texture.
  2. Return the shredded chicken to the slow cooker. Distribute it back through the bean-and-tomato mixture.
  3. Stir everything together until the cream cheese is fully melted and incorporated. Continue mixing until you see a creamy, evenly colored sauce clinging to the chicken.
Serve
  1. Serve the fiesta chicken over rice, in tortillas, or in bowls. Top with shredded cheddar cheese, sour cream, and fresh cilantro for a bright finish.

Notes

For the creamiest texture, cube the cream cheese and place it directly on top so it melts during the cook. Refrigerate leftovers in an airtight container for up to 4 days; reheat gently in the microwave or on the stovetop until hot. Freezing is yes—freeze up to 2 months and thaw in the fridge overnight, then reheat until steaming. For a lighter option, use reduced-fat cream cheese (the flavor stays close while cutting calories).
