Ingredients

Chicken thighs and sauce
  • 5 boneless skinless chicken thighs
  • 0.333 cup honey
  • 0.25 cup soy sauce
  • 6 garlic, minced
  • 2 tbsp ketchup
  • 1 tbsp apple cider vinegar
  • 1 tsp ginger, grated
  • 0.5 tsp red pepper flakes
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 1 steamed rice for serving
  • 1 green onions for serving
  • 1 sesame seeds for serving

Equipment

  • 1 Dutch oven

Method

Make the honey garlic sauce
  1. Whisk honey, soy sauce, garlic, ketchup, apple cider vinegar, ginger, and red pepper flakes in a bowl until evenly combined.
  2. Place chicken thighs in a slow cooker and pour the sauce over top so they’re coated.
Slow cook the chicken
  1. Cook on Low for 4-5 hours or High for 2-2.5 hours until the chicken thighs are tender.
  2. Remove the chicken from the slow cooker and shred it, or keep it whole, depending on your preference.
Thicken the sauce and finish
  1. Whisk cornstarch and water until smooth, then stir it into the slow cooker sauce.
  2. Turn the slow cooker to High and cook for 15-20 minutes until the sauce thickens and looks glossy.
  3. Return the chicken to the thickened sauce and simmer just to recoat, then serve over steamed rice with green onions and sesame seeds.

Notes

For extra flavor, let the sauce thicken on High right before serving so it stays thick and clingy. Store leftovers in an airtight container in the refrigerator for up to 3-4 days; reheat gently until hot. Freezing is yes: freeze the chicken and sauce for up to 2 months and thaw in the fridge. For a lower-sodium option, choose a low-sodium soy sauce and keep the rest the same.
