Method
Mix dry ingredients
- Combine Kodiak Cakes flapjack and waffle mix with pumpkin pie spice and cinnamon in a bowl.
- Whisk until the spices are evenly distributed.
Mix wet ingredients and combine
- Whisk pumpkin puree, water or milk, eggs, vegetable oil or melted butter, brown sugar (or maple syrup), and vanilla extract until smooth.
- Stir the wet mixture into the dry ingredients until just combined, and rest the batter 2 minutes.
Cook the pancakes
- Heat a greased skillet or griddle over medium heat until hot.
- Pour about 1/4 cup batter per pancake and cook 2-3 minutes, until bubbles appear and the edges are set.
- Flip the pancakes and cook 1-2 minutes more, until the second side is golden.
Serve
- Serve the pancakes warm with maple syrup and pumpkin seeds.
Notes
For tender pancakes, stop mixing once the dry streaks disappear—overmixing makes them tough. Store leftovers in the refrigerator up to 3 days; reheat in a toaster oven or skillet until warm through. Freezing is yes: freeze cooked pancakes in a single layer, then transfer to a bag and reheat from frozen. Dietary swap: use plant-based milk in place of water/milk if you want dairy-free pancakes (follow the mix box for consistency).
