Ingredients

Beef and Potatoes
  • 2 lb beef stew meat or sirloin Cut into 1.5-inch pieces.
  • 1.5 lb baby Yukon Gold potatoes Halved.
  • 4 tbsp butter Use sliced portions to dot the top before cooking.
  • 2 tbsp butter Stir in at the end until melted and sauce looks glossy.
  • 6 clove garlic Minced (about 6 cloves).
  • 0.75 cup beef broth
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 fresh parsley For garnish.

Equipment

  • 1 slow cooker

Method

Layer in the Slow Cooker
  1. Place the halved baby Yukon Gold potatoes in the bottom of the slow cooker, spreading them into an even layer for steady cooking.
  2. Add the beef stew meat or sirloin pieces on top of the potatoes so the meat steams and tenderizes while the potatoes cook alongside.
Make the Garlic Butter Sauce Base
  1. In a bowl, whisk together beef broth, soy sauce, Worcestershire sauce, minced garlic, onion powder, Italian seasoning, smoked paprika, salt, and black pepper until combined.
  2. Pour the sauce mixture over the beef and potatoes to coat the surfaces before the slow cook.
  3. Add the 4 tablespoons of sliced butter on top in small pieces so it melts into the sauce as it cooks.
Slow Cook
  1. Cook on LOW for 5–6 hours or on HIGH for 3 hours, until the beef is tender and the potatoes are fork-tender (visual cue: meat should shred with minimal resistance).
Finish and Serve
  1. Stir in the remaining 2 tablespoons of butter until melted, creating a glossy, lightly thickened sauce.
  2. Serve directly from the slow cooker, garnished with fresh parsley (visual cue: parsley adds bright green contrast over the golden sauce).

Notes

Pro tip: keep the lid closed during cooking for best temperature stability and tender results. Refrigerate leftovers in an airtight container for up to 3 days; reheat in the microwave or on the stovetop until hot. Freezing is yes—freeze portions up to 2 months and thaw overnight in the fridge. For a lower-sodium option, use reduced-sodium soy sauce and Worcestershire while keeping the rest the same.
