Season and layer in the slow cooker
- Rub the bone-in chicken thighs with olive oil, lemon juice, dried oregano, salt, and black pepper to evenly coat the meat.
- Add the smashed garlic and half the lemon slices to the bottom of the slow cooker, then nestle the chicken on top.
- Lay the remaining lemon slices and fresh rosemary sprigs over the chicken so they infuse the broth while it cooks.
- Pour the chicken broth around the base of the chicken, not directly over the top layers.
Slow cook until very tender
- Cook on Low for 5–6 hours until the chicken is very tender and easily pulls apart with a fork, with the lemon and rosemary visible in the fragrant broth.
Serve
- Serve the bone-in chicken thighs with the cooking juices spooned over, then finish with fresh parsley for a bright fresh top note.
Notes
For maximum tenderness, avoid lifting the lid during cooking. Refrigerate leftovers in a sealed container up to 3 days; reheat gently to avoid drying.
