Asian Slow Cooker Chicken Thighs

Asian slow cooker chicken thighs with glossy soy-ginger hoisin sauce. Slow-cooked until tender, then thickened with a cornstarch slurry for a shiny, clingy finish over jasmine rice.

Ingredients
  

boneless chicken thighs
  • 4 boneless chicken thighs Use 4–6 thighs, adjust sauce coverage as needed.
soy-hoisin glaze
  • 0.25 cup soy sauce
  • 3 tbsp hoisin sauce
  • 2 tbsp honey
  • 2 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 4 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tsp sriracha
cornstarch slurry
  • 2 tbsp cornstarch
  • 2 tbsp water
for serving
  • 1 sesame seeds
  • 1 green onions
  • 1 jasmine rice

Method
 

Make the sauce and coat the chicken
  1. Whisk soy sauce, hoisin sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and sriracha until smooth and evenly combined.
  2. Place boneless chicken thighs in the slow cooker and pour the sauce over them, coating each piece well.
Slow cook until tender
  1. Cook on Low for 4–5 hours until the chicken is tender and easy to shred.
Thicken and glaze
  1. Remove the chicken from the slow cooker and stir the cornstarch slurry (cornstarch mixed with water) into the sauce.
  2. Cook on High for 15–20 minutes until the sauce is glossy and thick.
  3. Return the chicken to the sauce and stir to coat, then serve over jasmine rice.
Finish and serve
  1. Top the chicken and rice with sesame seeds and sliced green onions.

Notes

For the thickest glossy sauce, whisk the cornstarch slurry until fully smooth before adding, and stir well to prevent lumps. Refrigerate leftovers in an airtight container for up to 3 days; reheat gently in the microwave or on the stove with a splash of water. Freezing is not ideal for the sauce texture. Dietary swap: use maple syrup instead of honey for a non-animal sweetener.
