Ingredients
  

ground beef
  • 1 lb ground beef
onion
  • 1 medium onion, diced
garlic
  • 3 garlic cloves, minced
shell pasta
  • 2 cup medium shell pasta, uncooked
beef broth
  • 2 cup beef broth
diced tomatoes
  • 1 can (14.5 oz) diced tomatoes
Rotel
  • 1 can (10 oz) Rotel tomatoes with green chiles
heavy cream
  • 1 cup heavy cream
seasonings
  • 1 tsp Italian seasoning
  • 1 tsp smoked paprika
  • 0.25 Salt and black pepper to taste
cheddar
  • 1.5 cup sharp cheddar cheese, shredded

Method
 

Brown the beef
  1. Brown the ground beef in a large deep skillet over medium-high heat, breaking it apart until it’s no longer pink. Drain any excess fat so the sauce stays rich but not greasy, then keep the skillet hot.
Build flavor
  1. Add the diced onion and cook for 3 minutes until softened. Stir in the minced garlic and cook 1 more minute until fragrant.
Cook the pasta
  1. Add the uncooked shells, beef broth, diced tomatoes, Rotel, Italian seasoning, smoked paprika, salt, and black pepper, then stir to combine and evenly coat the pasta. Bring the mixture to a boil.
  2. Reduce heat to medium-low, cover the skillet, and cook for 12–15 minutes until the pasta is tender and most liquid is absorbed, shaking the pan once if needed. Watch for bubbling through the cover as the sauce thickens around the shells.
Make it creamy and melt cheese
  1. Stir in the heavy cream and simmer uncovered for 2–3 minutes until the sauce thickens and looks creamy. Keep the heat at a gentle simmer to avoid scorching.
  2. Remove from heat, then stir in the shredded cheddar until fully melted and glossy. Serve immediately while the cheese pools inside the shells.

Notes

For the creamiest texture, keep the simmer gentle once the cream goes in and add cheddar off the heat so it melts smoothly. Store leftovers in the refrigerator up to 3 days; reheat gently with a splash of broth or milk to loosen the sauce. Freezing is not recommended because cream sauces and pasta can break down after thawing. For a lighter option, use half-and-half instead of heavy cream (the sauce will be slightly thinner).
